Cornish Smokies or Smoakies as we like to call ourselves, produce traditional Oak smoked food. Oak is indigenous to Cornwall unlike beech that is widely used for smoking elsewhere.  Combined with our  smoking process the Oak  produces a mild subtle flavour that does not mask the taste of the food and  yields products that are unique. Our fish are locally caught from an environmentally responsible fishery and are smoked whilst fresh and at their best. The process is entirely traditional with no dyes or other additives used. The ingredients are just fish, salt and genuine oak smoke. They are smoked with a combination of cold and hot smoke so that the final product is still moist but cooked. Finally they are vacuum packed to retain their freshness. They can be eaten hot or cold, used as a cooking ingredient or frozen for later consumption. The process is time and labour intensive but produces wonderfully authentic tasty delicacies.

Smoked Trout patè, a more subtle flavour than salmon patè
Smoked Mackerel patè, using our plain oak smoked mackerel
